Fundraiser Party Tips:

1. Remember to tempt your guests with an outrageously exciting invitation. The invitation should contain a paragraph or two, detailing information about the chosen charity. This will help your guests; get into the spirit of the party.

2. Instead of requiring a fixed donation, leave it up to your guests to give what they are comfortable contributing. You will raise more money this way.

3. Have a pre-paid postage envelope inside the invitation, as well a place for their contribution.

4. The party itself should just be a FUN event! Serve whatever food, and drink, makes you happy. Decorations can be anything you like. There is no need to have pictures or information about the charity, since you’ve already taken care of that with the invitation.

5. Half-way through the party, make a toast by announcing how much money you’ve raised, and give thanks to all your friends and family for their generosity.

6. Party, party, party...

New Year’s Eve Safety Tips:

A designated driver must be chosen way before the first drink. Be prepared to have a room ready for those that can’t make it home.

A menu consisting of fatty foods is highly recommended. It will slow the effects of alcohol from being absorbed as quickly.

Keep your guest hydrated with crisp, clean, bottled water.

A fireworks display can be an awesome experience, but you must be prepared for any disaster that may occur. Keep a few fire extinguishers handy in case of emergency.

Light fireworks on a clean flat surface, away from anything flammable.

When opening champagne bottles, make sure the cork is down with the palm of your hand as you untwist the wire hood. Always point the bottle away from your guests. Place a towel over the bottle and slowly twist the cork. When the cork is almost out of the bottle apply downward pressure as the cork breaks free.

Safety is your first and most important ingredient to a successful party!

Hors d’oeuvres Party Tips:



Without a doubt, the most memorable parties are the ones that serve Hors d’oeuvres. These scrumptious treats were traditionally for the waiting period between when the guests arrive and when the meal is served. But today some of the most fun parties are the ones that only serve Hors d’oeuvres.

Making fabulous Hors d’ oeuvres are very time consuming. So, spread the work out over a few days.

A real time saving trick is to make large items that can be made at one time, like sausage. Cut the sausage into bite-sized pieces and serve with a colored frill pick or on a cracker with a drop of Dijon mustard.

Offer a mix of cold and hot hors d'oeuvres.

Serve a variety of diced cheese in-between the hot Hors d’oeuvres.

Make sure you have plenty of beverage napkins to give your guests when serving. Count on at least 10 to 12 napkins per person.

The best tip of all is to call a professional caterer like myself, sit back and enjoy your fantastic party!

I'm throwing a big welcome home bash for my buddy, and I was wondering if it would be better to hire a DJ, or a band?

Bob, that's a question that comes up on a daily basis. Cost is always a factor. Hiring a DJ will be a lot less expensive then hiring a band. And of course you have to consider the location of the party. Most apartments and homes are not equipped with the proper power source that a band would require. A live band can be more exciting and impressive, but a DJ may offer a wider variety of musical styles. If you are renting a hall, and money's no object, then why not go for the whole enchilada, and hire a band and a DJ.

As with everything in life, first impressions are what people remember. So, don't skimp on the quality of the coffee! Having fresh brewed coffee and freshly squeezed juice before the meeting starts, will send the meeting in the right direction. Vary the menu!!! Don't just buy a box of doughnuts, or a fruit platter. That's not going to cut it. Everyone is different, so make the menu a combination of healthy foods as well as sweet concoctions. Change the menu around. Add and subtract menu items each week, to keep everyone happy, content and ready to work!!!

Fun Party Ideas:


Wine Tasting Party: You don't have to be a wine expert to host and enjoy a Wine tasting party. Take a trip to your local wine shop and ask the opinions of the staff. They will be more than happy to recommend great tasting wine at reasonable prices. Go with 3 bottles of red, and three bottles of white. Add some cheese and crackers, and have fun!

Hawaiian Luau: Start by transporting your guests with exotic tropical decorations. Serve traditional Hawaiian luau food; poi kalua pig, lomi salmon, chicken long rice, surrounded by tropical fruits and chocolate covered macadamia nuts. Have plenty of Tropical drinks (alcoholic, non-alcoholic, or both) on hand. And to really kick up the party, have a limbo contest.

Decade Party: This kind of party is fun on so many levels. It's a costume party with a theme. Pick out the decade and you're only limited to your imagination. Break out your Fondue set for the 60s, Doo-Wop music for the 50s, and serve Mai Tais for the 40s, etc...

Hot Food Tips:


What do you do if you're having a party and you don't have a way of keeping all your food hot? Consider using an ice chest. Yes, an ice chest! An ice chest will keep hot foods hot, and cold foods cold. That's because its a thermal unit.

Keep in mind, food must be stored at 160 degrees or hotter, so DO NOT leave the food in the Chest for an extended time. It will give you that extra 1/2 hour you need to free up the oven while your cooking other foods.

Here's the best way to use the chest.

1. Make sure the ice chest is CLEAN!

2. Pour a Gallon of Boiling into the ice chest.

3. Close the lid for 2 minutes

4. Pour out the water, and place your wrapped food into the chest.

5. Potatoes, Vegetables, Breads, Gravies, Sauces are ideal candidates for the ice chest.

Gas Grilling Tips:

1. Always preheat your grill.

2. Lightly oil the cooking grate before placing it over the heat.

3. Marinate meats from 20 minutes up to several hours or even overnight depending on the cut of meat, for tender, flavorful results.

4. Apply spice rubs to kick up the flavors.

5. To avoid overcooking and burning the sugars in the sauce, apply sauces just prior to completion of cooking.

6. Use cooking tongs instead of a fork to turn meat, to avoid losing meat juices.

7. Get creative. Meat and Fish is not the only thing you can grill. Vegetables, to add to salads, and fruit to make chutneys and salsas are always fun and delicious.

Food Freezing Tips


Today, most parents each hold down a full time job, and with so many hours in the day it becomes increasingly hard to cook healthy meals for their children. Take-out, and fast-food has its place, but with a little careful planning, you can put home-cooked meals on the table faster than you might of thought possible. When you have time to cook, double or even triple the recipe and freeze the leftovers for another time. Soups, stews, pasta sauce are all good candidates, and most of the time taste better, because their flavors have jelled. Your microwave is your friend. That great invention will have your healthy meal on the table faster than a Domino's Pizza car driven by Dale Earnhardt!

Foods That Freeze Well

* Cooked chicken or turkey in casseroles.
* Stews, ragouts, goulashes made with beef, lamb, pork, or veal. Most vegetables used in these combination dishes, such as peas, carrots, celery, or small quantities of onion also freeze well. However, potatoes may not be satisfactory.
* Baked meat loaf.
* Cooked dried beans, such as bean soup and baked beans. Because freezing softens beans somewhat, cook until barely tender for best quality. Limit storage time to two weeks if seasoned with ham or bacon.
* Cooked rice and pasta, plain or with tomato sauces.

Foods That Do Not Freeze Well

The flavor and texture of some foods become poor during freezing. Avoid using these foods.

* Cooked egg white toughens.
* Mature potatoes, which tend to disintegrate, become watery, or darken. New potatoes are better.
* Fried foods tend to have a warmed-over flavor when reheated.
* Avoid freezing cured meats; salt hastens rancidity.
* Fresh salad greens, raw tomatoes, raw apples and grapes become soft, soggy, and mushy. Mayonnaise separates. To make entree salads, freeze some ingredients separately; add fresh vegetables, fruits, and dressings to other thawed ingredients.

Outdoor Party Tips

It’s October. The leaves are starting to turn, the weather will be getting colder and colder... but not here in beautiful La, La land! While people on the East Coast reluctantly bring their parties indoors, we can continue to enjoy outdoor events in Southern California for many, many months. And I’m always here to help you! Place citronella candles throughout the party area to keep the bugs away.

Simple or elaborate centerpieces are one of the best ways to illustrate your party's theme.

Tablecloth grips are the best way to secure plates and napkins on a windy day.

Stringing small white lights around a few trees will look magnificent when it gets dark.

A great idea for table lighting is to fill small metal pails with sand and use them to hold candles.

Holiday Planning Tips

Summer is over, and it is now time to turn our thoughts to the HOLIDAYS!! You may think you've got plenty of time, but in my experience it is never too soon to plan for your, Halloween, Thanksgiving, Chanukah, Christmas, and New Year's Eve events. Whether you use a professional caterer, or do it yourself, proper planning is the key to any successful party...

1. Decide on the date, time, and place.

2. Plan the menu and the guest list.

3. Give careful thought to table settings and decorations.

4. Make a list of everything you need to rent or borrow.

5. A checklist for food and beverages.

6. Shop in advance for everything that is not perishable.

7. Plan a cooking timetable.

Choosing The Best Time & Date For Your Party – Part Four

If you’re hosting an older crowd, as in a Golden Anniversary celebration, some of your guests might not want to stay up late. Consider havingthis kind of party early on a Saturday evening or on Sunday afternoon. Start it at 6:00 PM at the latest so that by 10:00 PM, your guests are out the
door.

A children’s party should last no more than three hours. Two and a half hours is optimum. Daylight Saving Time, whether you’re “falling back” or “springing ahead,” often causes confusion. But if you must have the party on a day when the time is changing, include a reminder of the time change in your invitation.


Finally, check your calendar for holidays and events that often prevent people from showing up at parties due to other obligations. Some events and religious holidays vary from year to year. (see book for details)

Choosing The Best Time & Date For Your Party – Part Three


In general, a good time to start a dinner party is between 7:00 and 8:00 PM.

It might be a good idea to start a winter dinner party earlier than you would a summer dinner party because it gets dark earlier in the winter.

Another reason is that if you live in an area of thecountry that has cold, snowy winters, you don’t want people to have to drive home late at night when the roads are frozen.

If you’re hosting a younger crowd, you may want to start later in the evening. For one thing, people

like to arrive “fashionably late.” For another, theearlier they arrive, the more liquor they’ll likely be drinking, which means the more guests from whom you’ll have to take away the keys. (And by the way, fashionably late is no longer fashionable — it’s downright rude!)

Choosing The Best Time & Date For Your Party – Part Two


If you’re planning a party for a weekday, keep in
mind that most people will be coming directly
from work. Choose a time early enough so they
can scoot right over, have a good time, and then go home at a reasonable hour.

For children or families, the best time for a party
is Sunday afternoon. This gives them something
to look forward to as a way of rounding out the
weekend. Saturdays are a good second choice, but
you’ll find that some parents will still be working
that day as well as attending their children’s
activities (soccer, baseball, etc.).

For a party where alcohol is served, Saturday is a
great night. Friday is a good backup night, but
again, since more and more people are working
on Saturdays, you may have a smaller turnout
than if you wait until Saturday night.

A party for adults will generally last four hours. It
might last for five but tends to fizzle at that point.
Knowing how long the party is going to last will
be determined by how many activities you’ll be
having (gift opening, speeches, etc.), as well as
whether you’re serving several courses or just
appetizers.

Choosing The Best Time & Date For Your Party - Part One

So, you’ve decided to have a party. Congratulations on your birthday, anniversary, work accomplishment, or what- ever the reason for your gathering. If you’ve hosted a party before, you may already know that there is something of an art to choosing the right time and date. For instance, a party that falls on Labor Day weekend may have low attendance because many people go out of town for the long weekend. Or if you have a party during the Final Four basketball tournament, your sports fan friends probably won’t be there unless you happen to have large-screen TVs all around.

Take major holidays, local community functions,
and sporting events into consideration. Even events that aren’t a big deal to you personally might be a reason for your guests to stay home.

Remember, you can have a party on any day of
the week. You’re likely to have less response on certain days, like Mondays, but it’s not taboo…

When it's sizzling hot outside, there's only one way to cool down your friends and family - Make a splash with a "fun in the sun" poolside party!

Remind your guests what to bring:

Swim suits,
Beach towels, Hats, visors, and sunglasses, Sun lotion, etc...

Perk up the pool party with wet and wild decorations:

Hang colorful plastic or paper fish from the trees. Set out water toys, beach balls, inner tubes, and rafts. Burn tiki-torches and string-up colored lights for nighttime swimming. Set out festive beach umbrellas, colorful deck chairs, and wild beach towels for lounging around.

Refresh the hot and thirsty crowd:

Have plenty of Gatorade, lemonade, iced tea, and your favorite drinks. A variety of finger food is the best way to go. Fill goldfish bowls with Goldfish Crackers and set them around the party area. Make Slushies to cool down the kids by filling the blender with ice and fruit juice and whirling until smooth and icy. Serve in paper cups with small plastic spoons.

Always supervise children around water. Don't leave them unattended for a minute.
