Valentine's Day!

It has become a tradition on Valentine's Day to give our loved ones candy, flowers, romantic dinners, jewelry, etc., but did you know that Valentine's Day originated in the fifth century Rome as a tribute to St. Valentine, a Catholic Bishop. The first known Valentine card was sent by Charles, Duke of the Orleans, in 1415 to his wife. At the time he sent the card he was a prisoner in the tower of London. Nowadays we send Valentine cards because we're prisoners of love.

Valentine's Day is fast approaching, and you know you want to do something wonderful for your special someone. Should you make a reservation at a fancy restaurant? But you remember how crowded it was the last time. Should you make a romantic dinner at home? But you think that's going to be a lot of work… well it doesn’t have to be!

An Easy Romantic Dinner For Two:

· Purchase packaged, ready-to-use greens for the salad, and ready-made dressing. Go to specialty shops, and bakeries for desserts, and breads.

A steak dinner is easy to prepare. If you don’t eat meat you can make this same recipe with swordfish, or salmon.

Herb Rib Eye Steaks

INGREDIENTS:

* 2 rib eye steaks

* 1/4 cup fresh basil leaves

* 1/8 cup chopped pistachios

* 1 teaspoon fresh lemon juice

* 1 small clove garlic, minced

* 2 tbsp. butter, softened

* Salt to taste

* freshly ground pepper

In food processor, combine the basil, pistachios, lemon juice, garlic, butter. Process till blended. Cover and chill the butter, then form it into 1" in diameter log. Wrap the mixture in plastic wrap and chill until hardened.

Grill steaks, or place on broiler pan 4-6" from the heat, for 10-15 minutes, or until desired doneness. Let the meat sit for about 5 minutes before serving. Slice the herbed butter and place it on top of the steaks, letting it melt into the meat. Salt and fresh pepper to taste.

30 Ways To Get Your Guests Involved - Part One

1. Introduce your guests. Introduce each guest to at

least one other person who shares a common interest.

2. Reduce your chairs. At a cocktail party, always have

fewer chairs than guests (have just enough for

25%–50% of the guests). This keeps your guests

moving and the energy flowing as they mingle and

circulate.

3. Throw a potluck. This is a natural way to involve your

guests because they will be making a contribution to

the party the moment they walk in the door.

4. Provide name tags. It may sound a little hokey, but

this is a great way for people to feel comfortable

introducing themselves to other guests.

5. Host a wine tasting. This is a wonderful way for

guests to mingle.

6. Supply disposable digital cameras. Provide cameras

for your guests to take pictures. Collect them at the

end of the party, and e-mail the best ones to the guests.

7. Throw a theme party. Theme parties and costumes

are a fun way to get guests involved before they

even show up at the party.

8. Hire a musician, DJ, or band. This will provide

entertainment and get people on the dance floor.

9. Offer a dance lesson. Hire a local ballroom or salsa

teacher to come in and shake things up.

10. Hold a freeze dance. As the party gets going, gather

a group of guests on the dance floor and have the DJ

start the music. Then have him turn off the music at

times during the song. Every time the music stops,

the guests must freeze in position. The last person

who freezes has to sit down. The final person left

standing wins a prize. (This game can be fun for

both children and adults.)

Did you know that partying is healthy for you? For Over 30 years I have been catering some of the best parties from New York, to L.A. and I have witnessed the health and success benefits of partying all around me. So if you’re feeling guilty for feeding your face a bit too much at a party this holiday season, I have good news for you; Partying and celebrating is a healthy way of life!

Webster’s defines "partying" as “a gathering for social entertainment or the entertainment itself, often of a specific nature; as a card Party, cocktail Party..." Well they didn’t mention downing a fifth of Vodka, so I guess we can enjoy ourselves without getting hammered. The very act of socializing is very beneficial to your health. Here’s how it goes: Shrinks, head doctors, mental health physicians or whatever you want to call them have been telling us for years to get out and party. Socializing and partying is a way to boost our immune system, and with so much talk about the immune system today we need all the help we can get. Social contact in a friendly, pleasant, upbeat environment is extremely reinforcing to who we are as humans. We are by nature social animals.

Socializing and partying enriches us. So, why doesn't everyone partake in this age-old ritual? Well here are some of the reasons: I’m too old, not hip enough, too tired, don’t have the time, it’s too far, I don’t like the food they’re serving, my clothes don’t fit--go ahead add on to the list, I know you can! Listen, it’s your life, but if you want some long overdue happiness, you can start by joining the party!

Here’s more good news, happier people live longer. Elaine Wethington, Co-director of the Bronsen Brenner Life Course Center at Cornell University, states that people who have a strong social support system have a greater sense of well being. On the flip side Lisa Berkman, Chair of Health and Social Behavior at Harvard School of Public Health, says studies have shown that reclusive people are at increased risk for poor health. Hey! I’m not making this up. So here we go again, you can make your excuses or jump into the game of life. If you know someone who is a little down and lonely, be a good neighbor and next time you’re invited to a party do them a life changing favor- invite them! And if you yourself enjoy a good party all I have to say is party on!

Make Sure You Plan In Advance: Get it done. Don't leave it for the last days. You don't need the extra stress!

Select Your Wardrobe: If you haven't worn it lately, try it on! Clothes have a funny way of shrinking when they hang in the closet too long! Make sure you have your clothing cleaned days before the event.

People And Pets: Make arrangements in advance if you don't want them at the party. You shouldn't burden your guest with (close the door-don't let the Dog or Cat out)…

Love Thy Neighbor: You don't have to invite your neighbor, but let them know you're having a party, so they are ready for the noise. Now they can make planes to go out, if they want to avoid the noise. Your courtesy will be well appreciated.

Make Sure You Eat!!!- Eat something before the guests arrive so you have the energy to greet everyone. People often forget to eat. or are too nervous before their party. Take a few minutes, about two hours before the event to do so. Get dressed, and don't forget to brush your teeth.

Lock Up Valuables: Put away items that are breakable & valuable. Emergencies Phone, you should have on hand: Police / Fire/ ambulance, Don't rely on 911 alone. Local cab Company and Motel or Hotel for those who drinkie too much! And make sure you know where you put your first aid kit, and fire extinguisher.

The more you can get ready beforehand, the more time you will have to enjoy yourself during the party.

Shop for all non-perishable food ingredients and other supplies as soon as you can. The day before the party shop for all your fresh ingredients and last minute items.

Make sure you have enough ice.

Set up the linens, tablecloths, the serving utensils, napkins, and arrange centerpieces, flowers, and candles. Set up the bar with glasses, ice bucket, corkscrews, and cocktail napkins the morning of the party.

Make sure there is soap, towels, and toilet paper in the bathrooms and add a votive candle or two.

Start assembling and preparing the food. If things will be served warm or require any cooking, have them ready to go in their baking dishes, so you can get all the prep dishes washed.

Empty all garbage cans. Place clean-up rags where they are easily accessible.

Once the house is in order and ready, you can get yourself ready.

Set out any serving dishes for food to come and put out any hot pads that will be required.

Put out any food that you can.

Once most guests have arrived, put out the rest of the food and let guests help themselves.

Ordering food from your favorite restaurant for your next party!

Here's how to make it work for you...

Make sure to ask the catering service at the market or restaurant to Cater Wrap the order. What is Cater Wrapping? Well, it's a PartyCharlie-ism that can best be explained as really tight, layered Clear Film wrapping, where you pull the film wrap out on the surface of the table, Place the Item on the Film and tightly wrap it completely around. Repeat till completely covered.

Ask the Restaurant to place your food in a disposable pan that will fit in your oven (measure it and tell them your requirements) Make sure the disposable pan will fit in your oven.

Make the food pickup your last errand so that you don't end up leaving the food in the car while you attend to other tasks.

For warmer weather if you have left your food in the car for a while, use the Ice Cream Test. If the ice cream has melted, you've not only left the food in the car too long, but you may have also built up microorganisms.

If you're transporting perishable items and your trip will take more than an hour, put the food in an ice chest.

Blue Ice Packs Work Well instead of packing foods in ice which melts and gets messy. Fill a plastic freezer bag with about an inch thick of water. Lie it down in your freezer. When it is frozen, it will be a sheet of ice, the thickness of one of those ice packs. You can make several at once and place them on top of one another while you freeze them.

Make sure that the items are secure in the car so that they don't slide off the seat and onto the car floor. Storing them on the floor helps. Or, you can sometimes even tuck them on to the back of the seat using your seat-belts.

The PartyCharlie summer party series continues this month with an old idea, with a new twist... An outdoor masquerade party! It's sexy, it's fun, it's what summer is all about! Hide behind your mask, dressed in your sexiest summer clothes!

The theme of your party can be anything you desire, from elegant to college frat. Once the theme is decided, you would want to send out invitations. I would recommend at least a month in advance with a reminder no less than a week before your event.

A masquerade party is about mystery. Ask your guests not to speak for the first half hour of the party; this will keep everyone guessing about each others identity. Hand out erase boards as your guest arrive so they can communicate with each other during this period. Have a contest to see who can identify the most people. Once the winner is crowned, the silence ends, and the partying begins!

Keep watch over the self-service bar area to make sure no underage drinkers are serving themselves (or being served).

Close the bar approximately 30 minutes before the end of the party and serve only water, soft drinks, and coffee so guests have a chance to sober up.

Don’t use anything breakable (such as a glass) to scoop out ice for your drinks. If the glass cracks without your noticing it, shards and splinters could end up in the drinks.

Keep entrances and exits clear of clutter.

Never put knives in a soapy sink. You may reach in later and…OUCH!

Always clean and put knives away after you use them, even if you plan to use them again in the next few minutes.

Never place a knife on the edge of your counter.

Keep floors dry and clean up spills immediately.

When cooking, always keep pot handles turned in. This will prevent someone from knocking a pot off the stove or a child from touching it.

Have a flashlight and first aid kit available.

Have fun & enjoy yourself! Remember, you’re not launching the space shuttle—it’s a party, and you should have fun creating wonderful energy!

Chapter 7 - Safety – Making It a Priority – Part Two, pages, 44, & 45.

If you’re using lights for design purposes — for instance, reflecting color lights off the walls — don’t place bulbs near objects that can catch fire easily. The heat from a bulb can be intense.

Always make sure the light fixtures are secured and won’t tip over and burn the carpet or any other items.

Make sure electrical/extension cords are firmly plugged in. Not doing so can cause sparks at the outlet.

Tuck away or tape down cords so guests won’t trip over them.

Post emergency numbers next to the phone, including the local fire department, police department, and poison control center. We all know 911,but these days, you can’t rely on 911 alone.

Check that your smoke detectors are in working order.

If you’re having a large backyard party and expect people to be swimming in the pool, it’s a good idea to have a lifeguard on hand. Some states have laws requiring that you have a lifeguard. Children must always be supervised.

Also, only use plastic-ware around the pool. If

someone breaks something in the pool, you may

have to drain it!

Using the Fire Extinguisher

Follow the fire department’s “PASS system”:

1. Pull the pin.

2. Aim the extinguisher nozzle at the base of the flames.

3. Squeeze the trigger while holding the extinguisher upright.

4. Sweep the extinguisher from side to side, covering the area of the fire with the extinguishing agent.

NOTE: Be aware that fire extinguishers have different grades. For instance, a water-type extinguisher would spread a grease fire. A higher-grade extinguisher can douse most kinds of fires, whether it’s a grease fire or a napkin that was accidentally set on the stove.

When renting or buying, be sure to check the class type:

Class type A extinguishers are for combustible materials such as paper, wood, cardboard, and mostplastic.

Class type B fires involve flammable or combustible liquids such as gasoline, kerosene, grease, and oil.

Class type C fires involve electrical equipment, such as appliances, wiring, circuit breakers, and outlets. Never use water to extinguish class C fires — the risk of electrical shock is far too great!

Class type D fire extinguishers are usually found in chemical laboratory. They are for fires that involve combustible metals, such as magnesium, titanium, potassium, and sodium.

This is the kind of bar I recommend if you’re doing self-service. Anything more can get very complicated and can end up sucking away all your time from mingling. Here’s what you’ll need:

How to properly set up a bar for a party or large event - Part 1

A full service bar is one where you will be providing everything; including the staff to serve the drinks (you can always get staff from a catering company). The first goal in setting up a bar is making sure it is in the right place. Don’t cause a bottleneck at the bar by placing it too close to the buffet, entrance, exit, guest table, or restroom (unless the bar is permanent and you don’t have a choice). Don’t be afraid to place the bar at the far end of your party space. In fact, it will encourage guests to enter further into the party.

Next is figuring out how much alcohol to provide. The following guide is designed to help you do just that. Estimate by considering what kind of alcohol you are serving and who your crowd is.

Remember the PartyCharlie # 1 rule: Know your guests.

MAKING YOUR BAR WORK:

* A full service bar can get expensive, but by estimating how much alcohol you’ll need you can keep costs to a minimum.
* To find out the trendy drinks in your area contact the local clubs or trendy bars.
* Know your crowd. For instance, if it’s a younger crowd, chances are that they won’t be drinking scotch on the rocks.
* Have a bartender. Your bartender will pour the right quantities, and alcohol won’t get wasted.
* Your washing machine is a great back up for keeping your canned beverages on ice. It has it’s own draining system and is ready to go.

HOSTING A CASH BAR

* It is illegal to sell alcohol without a license even at your own house. There are temporary liquor licenses that are available for a fee. It is best to check with your local city and state ordinances.
* Use drink tickets instead of having a bartender handle cash.
* Make sure you ticket person is VERY visible has lots of change.
* Charge in dollar amounts instead of $3.50 round it to $3.00 or $4.00

BENEFITS OF HAVING A BARTENDER:

* The set up and breakdown of the bar station is taken care of.
* The bar will be maintained and drinks will be kept cold.
* Spills and broken glasses will be taken care of immediately.
* They will have knowledge of different drink recipes for your guests to enjoy.
* Confirm that your Bartender will have a kit that will have all of the tools; shakers, pour tops, wine openers, etc.
* The bartender will be constantly watching out to make sure that the guests aren’t drinking too much. You can have the bartender alert you to any over-intoxication, and then you can handle it discreetly or, if the particular guest has a ride from a designated driver, you can inform the bartender of that.

A REMINDER ABOUT HAVING A BARTENDER

* If you’re party is at home it is up to you as to whether you’ll allow a “tip jar.” If you don’t allow one, find out if the bartender will be adding on a gratuity cost to your bill. Bottom line, though, if you don’t want your guests to feel they have to fork over money tell your bartender not to put a tip cup out. As listed in my Employee manual I don’t permit it!

When planning a Super Bowl party, simple is always the key, so the best way to serve your guests, is have them serve themselves from a buffet table.

Kickoff your party with everyone's favorite high fat, finger-licking foods - break out the chicken wings, pizza, hot dogs...

A great dish to serve for your Super Bowl party is Chili. You can prepare it ahead of time and your guests can serve themselves, so you don't have to miss a minute of the game!

Set up a separate table for the beverages. A keg of beer, a punch bowl filled with your favorite cocktail, and a cooler with assorted soft drinks, will keep your running around to a minimum.

Divide the TV room by team colors, and sit your guests accordingly.

Everyone loves a Super Bowl party, but not everyone loves football, so have a room set up for the non sports fan to enjoy.

Always plan for more guests than you think will attend. It is better to have too much, than not enough.

How to Hire a Photographer

There are so many factors that go into planning, and executing an incredible party, wedding, or corporate event, which is why you don't want to be without a great photographer to document the affair. I can not stress how important it is to hire the right photographer! Martin Cohen, an award winning photographer, based in Santa Monica, CA, has written a wonderful piece entitled, “How to Hire a Photographer,” that I'm pleased to present in this week's blog.

In this day and age of digital technology, there are many talented young people who pick up a nice camera and start a photography business. Some of them are quite capable, but many of them lack knowledge and professional experience.

In choosing a photographer, enthusiasm and creativity are certainly important assets to be considered. In addition, reliability and professionalism must be key factors in your decision who is the right person for the job. Asking for credentials never hurts, and personal recommendations make a big difference as well.

Always make sure that you have seen enough samples of the photographer’s work to be confident that you are working with a pro. Written contracts can be very helpful in clarifying the specifics of the job, as well as the compensation. How many hours, how many photographs, digital or film? What resolution are the final images on the disc, will prints be included, what size? How much time between the shoot and the delivery of the final product, what terms of payment?

Many professional photographers are registered with the State Board of Equalization and are required to charge sales tax, currently 9.75% in California. This can be a serious extra charge on the larger jobs – even though photography should be considered a service (and therefore free of sales tax), that is not how the State of California looks at it. A smart way around the sales tax is to upload the photographs to an FTP address and download them electronically. As long as there are no “tangible assets” like a CD, DVD or prints that change hands, legally there is no ground to charge sales tax.

Lastly, it is important to work with people that you like and trust. If possible, schedule a meeting in advance to discuss the job. Especially for weddings and other major personal events, the report that you have with the photographer is a crucial factor in the spontaneity and the liveliness of the final images.

Alternative Uses for a Coffeemaker

A coffeemaker can also be used for:

Cocoa

Hot tea

Cider

Hot toddies

Cold beverages

Yes, you read that right — you can use a coffeemaker for cold beverages. Just remove the stem from the pot and place it somewhere you won’t lose it.

The inside should be cleaned well because it might still have a coffee smell or flavor that will get into your noncoffee beverage. If you’re making a beverage from scratch, congratulations! If not, pour a powdered beverage mix, water and ice into the coffee pot. You then have a beverage container with a spigot.

Make sure you put a card out that lists the contents in the coffee pot because otherwise everyone will assume it’s coffee.

Do not use beverages with any pulp or fruit pieces because this will clog the spigot.

This probably goes without saying, but if you’re using the coffeemaker to hold a cold beverage, don’t plug it in.

Holiday Food Safety Tips:

The safest way to defrost a frozen turkey is in the refrigerator. Allow 24 hours of defrosting for every five pounds of turkey. Before buying your turkey, make plenty of room in your refrigerator. Make sure you have a plate big enough to accommodate the turkey, so the leaking juices do not contaminate other foods.

Before preparing the turkey, thoroughly clean the counter as well as all the equipment you'll be using. Clean immediately with hot soapy water anything, including sponges and hands, that come in contact with the raw turkey or juice.

Do not trust the "pop-up" thermometer that comes with the turkey. It's always best to check the temperature with a conventional meat thermometer. Cook the turkey until the temperature reaches 180 degrees Fahrenheit in the inner thigh.

The safest way to cook stuffing is on the stove or in the oven, but separate from the turkey.

Be sure to refrigerate leftovers within two hours of cooking the food. The turkey should be removed from the bone and used within four days.

How Many Cups Will You Need?

Plan on one cup of coffee per adult guest. Some people will have two, and others won’t have any at all.

Once you determine how many cups you’ll need, rent or borrow the appropriate-sized coffee-maker — either a 25-cup, 50-cup, or 100-cup maker.

Coffeemakers come with instructions, but if those instructions are lost, just look inside and follow the little notches indicating how much water you should add in order to make the number of cups you want.

Special Tip: When using more than one large coffeemaker (for instance, a 25-, 50-, or 100-cup brewer), never plug them into the same outlet while they’re brewing. Otherwise, you may overload the circuit. Once the coffee is brewed, you can then plug the coffeemakers into the same outlet. They utilize less power when the brewing process has been completed.

A cup of coffee is only as good as the water used to make it. Always start with cold filtered or bottled water.

Use clean equipment. When oils get trapped inside the coffeemaker, the coffee you brew will contain unpleasant-tasting remnants.

Running water through your filter will help keep it clean. Large-capacity coffeemakers will reach temperatures between 180 and 200 degrees.

Make sure to keep the unit clean. If it isn’t clean, the thermostat will not sense the temperature correctly and the coffee will not be as hot as it should be.

It’s always a good idea to provide decaffeinated along with regular coffee. Be sure to indicate which coffee has caffeine and which is decaffeinated. One simple and creative way of doing this is by noting each on place cards using calligraphy.

If you’re going to serve only one type of coffee, make it decaffeinated. Because of allergies or medical reasons, some of your guests might not be able to have caffeine.

Coffee condiments can help to make a good cup of coffee even better. For a little extra flair, you can also provide creamers, fun flavorings, and an assortment of spices and sweeteners for your coffee bar, such as cinnamon, nutmeg, mocha, and vanilla.

For a great pick-me-up, coffee is one of the most fundamental elements to any great party or event. And yet it is often forgotten in the planning. Hosting a party is an enormous task, with food and alcoholic beverages being the top priority in the party giver’s mind. This may be the biggest reason that coffee is overlooked. Or maybe it’s sub-conscious, stemming from the anxiety of having to make a good cup of coffee for dozens of people. Fear not — I’m here to rescue you from your coffee worries forever!

When buying loose coffee beans, crack a bean between your fingernails. If it cracks easily and you smell the vibrant aroma, it’s fresh. Old coffee is rubbery, will have a flat smell, and will sometimes
give off a rancid odor.

Purchase whole-bean coffee and grind it at the store. Do this a couple of days in advance. Great coffee will still be great a day or two after grinding.

Keep your coffee as fresh as possible by storing it in an airtight container. Bag it and squeeze out the excess air. Store the coffee in a cool, dark place.

Never freeze your opened coffee. In the freezer it is exposed to moisture, which will change the flavor.

Three reasons to stay away from Aruba
Having traveled the globe over the years and being in the hospitality business for most of my life, I know a good thing when I find it. Yes I must confess it was my first time in Aruba. An Island my sister Rose is fond of. So when I got the assignment to head out there I was like a kid in a candy store.

Let’s start with the three reasons to stay away from Aruba
Reason one. If you don’t like nice people then stay away. Reason two. If you don’t like Amazing Restaurants, homemade ice cream, enjoying a romantic candle light dinner for two on the beach, then stay away. And Reason three. If you don’t like sunny weather, blue skies, gentle breezes and turquoise water, boating, kayaking, giant water slides …then definitely stay away. This island is not for you!

Ok, so I’m being a bit sarcastic, and yes there was a dark cloud over there, one day out of nine days and that day it rained a bit…then back to paradise.
With all the hoopla about the island not being safe due to the story about that poor unfortunate gal who disappeared and assumed murdered, you would think the island is like walking around the outskirts of Washington DC. Yes the Nations capital~!
And that’s a whole other story.

But back to paradise! Ahhhh!!! Aruba!
My Travel Partner actress Tasha Tacosa boost that she has never felt so safe on a vacation, and yes this island is perfect for newlyweds, couples, friends looking to get away, family’s with small children or the corporation looking to host a cooperate event, seminar or conference.

Tasha and I met up with the general manager of the Radisson hotel Rob Smith who has been on the Island for 14 years he tells us that the Radisson is currently pumping 27 million into the hotel and property. We personally loved the hotel and the four diamond Sunset Grille restaurant. The Amazing stretch of beach, the talking parrots and all the amentias hotel had to offer. We chatted about the islands Desalination Plant being the seconds largest in the world and among the world’s cleanest water. Rob Smith says there is a high level of education with children having to speak three languages before they can graduate. The official and most widely spoken language is Papiamento (or Papiamentu). Papiamentu is a mixture of Spanish, Portuguese, Dutch, English, French, and it also has some Arawak Indian and African influences. A few more facts, 82 % of the people on the island own their own home. The island is 19.6 miles long and about 6 mile across and is under Dutch Law, outside the hurricane belt make a perfect travel destination. So next vacation… make it Aruba!

Volunteers – Making The Most Of Them

Recognize when you need help. We all like to have the pride of doing things on our own, but putting together a party is a big endeavor (even with all my guidance and tips). So recognize when you’re feeling a little overwhelmed, and rather than allowing yourself to burn out, turn to volunteers.

Use my PartyCharlie Checklist at the end of my book to determine in which areas you could use assistance.

Make a list of equipment you need to borrow and assign this task to a volunteer.

Make a list of the times when you expect rental deliveries, such as for tables and chairs. Don’t forget that if you’re allowing one of your volunteers to do this, he or she needs to check in every rental piece so you don’t get charged for something that was damaged or never arrived.

A Memorial Day Party is a great opportunity to bring your friends and family together. Your local park makes a great location for a Memorial Day Party.

Make sure you call your local parks department early and reserve a space for your party.

Over-sized blankets are perfect for any picnic. Bring along some plastic sheeting to protect the blankets in case the ground is moist.

Use one picnic basket for food and bring along another for dishware, glasses and other utensils.

Extra-strength paper plates are great for a big picnic as well as colorful Milmac plates.

Thermal flasks are very important.

The local supermarket has a fantastic array of colorful plastic glasses. They add so much to the overall presentation of your picnic.

Always bring a tablecloth, and an old sheet to use as an under liner.
Flowers will add a touch of elegance to your outdoor affair.

Clean-up is a very important part of any party. Don't forget to bring plenty of plastic garbage bags and paper towels.

And most importantly, pack sunscreen, and a first-aid kit.

Consider using disposable plates and plastic tumblers rather than china and glassware. Some disposable ware now comes with stylish designs.

It is less expensive to buy than glassware is to rent, and you don’t have to worry about cleaning or breakage charges. For some parties, it’s OK to mix plastic ware for food and glassware for beverage, or vice versa.

If you’re having a large party for which you need a venue other than your home, consider lower-cost alternative locations like local parks, community centers, church and synagogue social halls, lodges, or clubs, or call your local Chamber of Commerce for information about other venues.

In terms of renting locations, Fridays and Sundays are usually less in demand than Saturdays. Some facilities will discount their rates on thesedays, so ask for the discount.Book your venue in advance. You can often avoid extra fees for booking early. If you’re booking a venue at the last minute and
the hall is available, ask for a special deal. The venue management would much rather have someone use the space than let it go empty.

Choose the day of your party wisely. Most services (including catering, venue and equipment rentals, and entertainment) usually cost more on Saturdays and during high-demand seasons. By avoiding the dates listed in Chapter 9, “Date and Time – The
Best Choice for Your Party,” you may be able to get better prices.

Hold your event in the late afternoon or late evening. That way you can serve cocktails and hors d’oeuvres rather than a full meal. Remember, you’ll need to indicate on your
invitations that it’s a cocktail and hors d’oeuvres party so guests are aware it’s not a dinner party.

Having an early afternoon event may include a full lunch, but you’ll save money on beverages. Alcohol consumption is significantly lower
during an afternoon event versus an evening event.

Merchants pay a fee to process a credit card transaction. Ask rental companies and service providers for a discount if you pay in cash. Always get a receipt.

Here’s the deal — money isn’t funny, and you won’tbe laughing if you spend more than you have to. Use my
book as a party-planning guide rather than hiring a party planner. Trust yourself. You can throw the PartyCharlie Perfect Party. Here are some general tips:

Consider co-hosting your party with friends or relatives. A joint party takes some coordinating, but sharing in costs can really make it worthwhile.

Consider the number of guests carefully. The enthusiasm of throwing a party coupled with wanting to make sure you have plenty of guests can make for a longer guest list and a greater expenditure than need be.

The length of the party directly correlates with how much money you’ll spend on food, beverages, disposable ware, and any staff/labor you may need. You don’t need to have a party for six or seven hours. A typical party runs about four hours, weddings about five hours.

It's that time of the year again for holiday parties and family gatherings. It doesn't matter what religion you practice, or your ethnic persuasion, this is a universal time of the year! Successful holiday entertaining doesn't mean you need to be stuck in the kitchen, while your guests are having all the fun. Here are few tips for a fun holiday party that everyone can enjoy!

Make as many dishes as you can the day before your party. Keep the number of recipes that involve last-minute preparation to a minimum.

Avoid recipes that must be cooked at different oven temperatures.

Don't experiment, make recipes that are tried and true.

Think about contrasting colors ,and taste of the food. Avoid repeating flavors, each dish should stand out on its own.

Consider the presentation, and make a list the day before the party of every item you will need for your big event.

PartyCharlie’s Tips For Carving A Perfect Turkey:

Remove stuffing and rest turkey for 15 to 30 minutes.

Place the platter so that the legs point toward your right. Insert the fork into the bird between the leg and the breast, then slice the skin between the leg and carcass down to the thighbone.

Remove the entire leg and thigh.
Cut the drumstick from the thigh, following the natural separation.

Remove the wing. Now carve the breast in slanting slices, parallel to the rib cage. Check the side view from time to time to ensure that the slices are even and not too thick at one end or tapering into nothingness at the other. (Since carved meat cools quickly, be sure the gravy is kept piping hot, ready to pour over the turkey.) When you have finished one side of the turkey, turn it around and repeat the process on the other side.

Halloween is just around the corner, but that doesn't mean you should let the kids have all the fun! Follow my tricks to treat your friends and family to a ghoulishly fabulous costume party with a grown-up twist!

Hollow out pumpkins of various shapes, sizes, and colors. Drill small holes in them to create your designs. Add votive candles and arrange near the front door.

Play scary Halloween sound effects, and horror movie music as the guests arrive.

Have a door prize for the best Halloween costume.

String fishing wire over the buffet table and hang orange paper lanterns. Scatter Halloween confetti over the tablecloth.

Plan a simple party buffet menu. A variety of soups, salads and sandwiches will make it easy on you and your guests.

Make a graveyard cake for dessert. Cut cookie dough into tombstone shapes and bake. Use icing to write R.I.P. on the cooled cookies and personalize them with guests' names. Stick the tombstones into a chocolate cake to resemble a graveyard.

Create a refreshment station. Fill an aluminum tub with ice, and pack it with all your favorite canned and bottled drinks, and let everyone just grab an go.

Pumpkin Carving Tips:

Halloween is fast approaching. Skeletons, scarecrows, and witches, are always fun decorations, but nothing says “Halloween,” like a hand-carved pumpkin. The Jack-O-Lantern dates back centuries to the very beginning of that magical night called “Halloween.” Follow theses carving tips for a ghoulishly fun time!

1. Medium-sized pumpkins work best for stencils. If you are going to carve free-hand, then let your imagination choose the size.

2. Use a stencil for very detailed carving. Your local craft shop will have all the tools you need. The internet has many sites offering free stencils that you can download.

3. A boning and paring knife, an ice cream scoop, some old newspaper, a black crayon, and your imagination, are all you really need to carve the pumpkin free-hand.

4. Place the newspaper under the pumpkin. Cut around the stem of the pumpkin, and remove. Scoop out the seeds and membrane. Using a crayon, mark up the face of the pumpkin. Cut out the pieces, using a paring knife.

5. Place a votive candle into a glass candle holder. Light the candle and place inside the pumpkin. Place the stem-top back onto the pumpkin.

6. Put the pumpkin on display, to scare all the ghouls and goblins away!

"Charles Scola believes partying is the key to a healthy lifestyle.

Known as "Party Charlie" in Hollywood, the 50-year-old professional event planner has produced thousands of weddings, movie premieres and corporate events, including the grand opening of CityWalk at Universal Studios and a holiday bash for Hugh Hefner at the Playboy Mansion.

"I could never retire because I'm in a business that constantly gives me praises," he said. "That boosts my immune system so I'm never sick."

Scola said studies show that social people are healthier than recluses. But he notes that when he talks about partying, "it's the social interaction definition, not the college boy's definition."

He believes that when people eat at parties, socializing consumes calories and they tend not to gain weight. If they ate the same food at home, they would sit in front of the TV and it would turn to fat.

The formula certainly seems to work for the trim and energetic Scola.

"When I'm planning an event, nothing makes me nervous--it gives me a boost of energy," he said. "I find it exciting to feed thousands of people and do it well."

Charlie's Tips For Hiring A Valet Service:

· Get references. Follow up – call the references.

· Put it in writing. Put everything (hours, tips, special arrangements and general expectations) in writing.

· Parking attendants should provide, Flashlights, reflective cones, signs to let people know about valet service, key cabinet, uniforms, and valet tickets.

· Avoid confusion. When you’re having a valet service, post signs reading “Valet parking service for “such-and-such party.”

· Ask your valet company to Check with City Hall. Find out if you need any additional licenses or permits.

· Inform your neighbors. They will appreciate you notifying them before allowing guests to park in front of their homes.

· Prepare for the weather. Make sure the valet service has umbrellas for rain, as well as snow removal equipment (such as ice scrapers, salt, sand, and snow shovels) during the winter months. ( Well I guess we wont be needing that in LA!)

· Have the service visit the property. Make sure the company verifies the parking lots, locations and local rules. Also discuss security concerns.

· Find out what they’re wearing. Ask the valet service representative to come with examples of the uniforms and discuss what special dress requirements you have.

· Make sure the company takes care of their staff – so that you don’t have to. Make sure when you speak with the valet company that they provide meals for their staff (or that the hours of your party don’t encompass a meal time). Also, make sure that the company has a written policy that valets are not allowed to drink any alcohol from the bar while at the party.

Senator Kennedy & PartyCharlie:

First of all… YES, that’s me, sporting a beard with Senator Ted Kennedy. I first met the Senator in 1983 at Senator Tunney’s home, for an event for Governor Jerry Brown. Linda Ronstadt was one of the many celebrities in attendance, and the rumor making the rounds, was that Governor Jerry Brown was dating the internationally acclaimed singer.

A few years later, in 1994, I once again had the pleasure to meet Senator Ted Kennedy at a fundraiser I catered for Gray Davis, who was campaigning for Governor of California. It was a full service brunch with all the pomp and fanfare one would expect for an event of that magnitude. The outstanding event included the very finest smoked salmon, a breathtaking bakery display, assorted fresh squeezed juices, a cappuccino bar, top-flight chefs cooking gourmet omelets to order, all accompanied by a full white linen style service.

I noticed that the Senator was not eating. I approached him in my PartyCharlie way, and asked if I could prepare something else for him. The Senator explained that he and his wife, Vicki, already had breakfast, and would wait for lunch. I was delighted to tell him that I had a wonderful, homemade lasagna, for our staff meal, accompanied by our trademark Caesar Salad with Garlic Cheese Croutons. The Senator smiled, and asked if there would be enough for him and his wife. I returned the smile with a resounding, YES! Plus seconds!

The senator later asked what my last name was. I said SCOLA. He replied, “HA! Italian! No wonder why the Lasagna was so great!” I told him about the time I met him at Governor Brown’s event, and wondered if I could have a picture with him. He said he’d be delighted. It’s a picture that I’ve cherished for a long time, and I’m very happy to be able to share it with you.

A few years later, a good client of mine called, and asked me to create an event for Senator Barbara Boxer and Senator Diane Feinstein. My client said, “By the way, Senator Ted Kennedy is coming, and has requested your magnificent lasagna.” Well, you can imagine how that made me feel. On the day of that event, I brought the picture with me, and asked the Senator to sign it. I never asked for an endorsement on the lasagna, but I was happy to get it!

Senator Kennedy has been in the public eye for a long time, and I’m sure he will be greatly missed. I would like to take this time to give my most sincere condolences to his family, and friends.

Pool Party Tips:

1. Keep the menu simple. Finger foods work best. Pizza, chicken wings, hamburgers, hot dogs, submarine sandwiches, chips, fresh fruits, and sliced veggies with dip.

2. Provide a room for people to change into or out of bathing suits.

3. Ice, Ice, and more Ice. You can never have enough.

4. Keep the drinks in a cooler or a big tub. Use plastic cups for safety around the pool. A healthier alternative to sodas is to provide fresh fruit drinks, such as lemonade or punch.

5. Set up a number of patio chairs and tables around the pool area for your guests. Set up two additional large tables, one for snacks, the other for beverages. Arrange an ample supply of plates, cups, napkins, and utensils on the serving tables.

6. Play a variety of different musical styles.

7. Pool party games like "Marco Polo, and Sharks and Minnows" are always crowd pleasers.

8. Make sure somebody is keeping an eye on the children. A designated kid watcher is a must!

Sausage Cooking Tips:

July is only a few weeks away, and that could only mean one thing... National Hot Dog Month!!! I bet you thought I was going to say the 4th of July. Well, when you think about it, what would a fourth of July barbecue be without the venerable frankfurter? Invented over 500 years ago in Frankfurt, Germany, the hot dog took America by storm in the late 1800s, and it is still one of our favorite foods today.

frank•furt•er or frank•furt \noun

: a cured cooked sausage (as of beef or beef and pork) that may be skinless or stuffed in a casing

That's how Merriam-Webster describes them... My description is... simply delicious!

Sausage Cooking Tips:

Cook fresh sausages over gentle heat so the interior fully cooks.

Sausages can be steamed, simmered, fired or grilled, or a combination of methods.

Before cooking, prick the skins to prevent bursting.

Reheat sausages in hot water, but avoid boiling them as their skins will split.

Onions in the cooking liquid add flavor to sausages.

Parboil fresh sausages in water or beer before grilling or frying.

Beer adds a stronger flavor than water. Malt-heavy beers add sweetness and are good for strongly flavored sausage. Lagers add a slight bitterness and complement sweeter style sausages.

New York Onions For Your Dog

5 medium brown onions
1 tablespoon butter
1/4 cup ketchup
hot sauce to taste
hot pepper flakes to taste

Cut onions into thin rounds. Melt butter over very low heat in a pot big enough to hold the onions. Add onions, and cover. Cook slowly for 45 minutes to an hour, stirring occasionally until the onions are very soft. Add the rest of the ingredients and cook for fifteen minutes. Serve over your favorite hot dog, or sausage. Serves 10 to 12.

Stress-Free Party Tips:

The more you can get ready beforehand, the more time you will have to enjoy yourself during the party.

Shop for all non-perishable food ingredients and other supplies as soon as you can. The day before the party shop for all your fresh ingredients and last minute items.

Make sure you have enough ice.

Set up the linens, tablecloths, the serving utensils, napkins, and arrange centerpieces, flowers, and candles. Set up the bar with glasses, ice bucket, corkscrews, and cocktail napkins the morning of the party.

Make sure there is soap, towels, and toilet paper in the bathrooms and add a votive candle or two.

Start assembling and preparing the food. If things will be served warm or require any cooking, have them ready to go in their baking dishes, so you can get all the prep dishes washed.

Empty all garbage cans. Place clean-up rags where they are easily accessible. Once the house is in order and ready, you can get yourself ready.

Set out any serving dishes for food to come and put out any hot pads that will be required.

Put out any food that you can.

Once most guests have arrived, put out the rest of the food and let guests help themselves.

Stress-Free Party Dips:

BLACK BEAN DIP

2 15-ounce cans black beans
2 teaspoons chopped garlic
2 tablespoons chopped fresh cilantro (or 1 T dried)
2 small tomatoes, chopped
2 teaspoons crushed red pepper (or to taste)
1 teaspoon cumin
Juice of 1 lime
1 small onion, finely chopped
Salt and pepper

In a food processor , coarsely chop the black beans, garlic, cilantro and 1 tomato. Transfer to a serving bowl. Add the red pepper, cumin, lime juice, onion, 1 chopped tomato, and salt and pepper. Chill, allowing the flavors to blend. Serve with chips and jicama scoops. Makes about 3 cups.

BLUE CHEESE DIP

1 cup blue cheese, crumbled, plus a little for garnish
4 ounces cream cheese, softened
1¼ cups sour cream
1 tablespoon lemon juice
Zest of 1 lemon
2 cloves garlic, minced
Salt and pepper to taste

In a medium bowl, cream together the blue and cream cheeses. Add the sour cream and mix until well-incorporated. Stir in the remaining ingredients. (This recipe can also be prepared in a food processor .) Transfer to a serving dish. Sprinkle a little crumbled blue cheese on top. Refrigerate for several hours to let the flavors meld, then set it out about 30 minutes before serving. Serve slightly chilled. Makes 3 cups.

When planning a party on a budget, it's very important to know approximately how many people will attend.

Good lighting will always make your party feel special. Miniature white lights strung from the trees are an inexpensive way to get that
accomplished.

Don't worry about spending a lot of money on decorating. Sometimes the great outdoors are decoration enough. Keep it simple with a picnic table and plenty of chairs.

Keep the bugs under control by using citronella candles.

A general menu like this, will get you off and running:

Hot dogs, hamburgers, veggie burgers, BBQ chicken, smoked sausages, salads, baked beans, chips & dips, a veggie tray, sliced tomatoes and onions, a bowl of lettuce leaves, relish, ketchup, various mustards, soda, beer and coffee. Top that off with a couple of cakes and pies, and everyone will go home happy!

MAKING THE MOST OUT OF YOUR REFRIGERATOR SPACE:

This is where an ice chest or two will come in handy.

Buy or borrow an ice chest or two depending on the size of the party.

Take an inventory of what's inside you're refrigerator. Combine duplicate items as long as the dates don't differ.

Remove items that are past their prime. You can even make a game out of getting rid of food past the expiration date by having your kids do it. Whoever comes up with the greatest amount of old food wins a prize.

There's no need to store beverages in your refrigerator for your party. Most only require an hour and a half in an ice chest topped of with Ice to completely chill.

Use Ziploc style bags to store your food. They will easily conform to the area of the refrigerator and help you create more room than plastic containers will. Sometimes you might fill a plastic container only halfway. The other half is wasted space. And when you're throwing a party, space in your refrigerator is at a premium.

If your freezer has built up a two-inch layer of ice all around it, it's time to defrost. Get this done several days in advance of your party.

Fundraiser Party Tips:

1. Remember to tempt your guests with an outrageously exciting invitation. The invitation should contain a paragraph or two, detailing information about the chosen charity. This will help your guests; get into the spirit of the party.

2. Instead of requiring a fixed donation, leave it up to your guests to give what they are comfortable contributing. You will raise more money this way.

3. Have a pre-paid postage envelope inside the invitation, as well a place for their contribution.

4. The party itself should just be a FUN event! Serve whatever food, and drink, makes you happy. Decorations can be anything you like. There is no need to have pictures or information about the charity, since you’ve already taken care of that with the invitation.

5. Half-way through the party, make a toast by announcing how much money you’ve raised, and give thanks to all your friends and family for their generosity.

New Year’s Eve Safety Tips:

A designated driver must be chosen way before the first drink. Be prepared to have a room ready for those that can’t make it home.

A menu consisting of fatty foods is highly recommended. It will slow the effects of alcohol from being absorbed as quickly.

Keep your guest hydrated with crisp, clean, bottled water.

A fireworks display can be an awesome experience, but you must be prepared for any disaster that may occur. Keep a few fire extinguishers handy in case of emergency.

Light fireworks on a clean flat surface, away from anything flammable.

When opening champagne bottles, make sure the cork is down with the palm of your hand as you untwist the wire hood. Always point the bottle away from your guests. Place a towel over the bottle and slowly twist the cork. When the cork is almost out of the bottle apply downward pressure as the cork breaks free.

Safety is your first and most important ingredient to a successful party!
