It's that time of the year again for holiday parties and family gatherings. It doesn't matter what religion you practice, or your ethnic persuasion, this is a universal time of the year! Successful holiday entertaining doesn't mean you need to be stuck in the kitchen, while your guests are having all the fun. Here are few tips for a fun holiday party that everyone can enjoy!

Make as many dishes as you can the day before your party. Keep the number of recipes that involve last-minute preparation to a minimum.

Avoid recipes that must be cooked at different oven temperatures.

Don't experiment, make recipes that are tried and true.

Think about contrasting colors ,and taste of the food. Avoid repeating flavors, each dish should stand out on its own.

Consider the presentation, and make a list the day before the party of every item you will need for your big event.

PartyCharlie’s Tips For Carving A Perfect Turkey:

Remove stuffing and rest turkey for 15 to 30 minutes.

Place the platter so that the legs point toward your right. Insert the fork into the bird between the leg and the breast, then slice the skin between the leg and carcass down to the thighbone.

Remove the entire leg and thigh.
Cut the drumstick from the thigh, following the natural separation.

Remove the wing. Now carve the breast in slanting slices, parallel to the rib cage. Check the side view from time to time to ensure that the slices are even and not too thick at one end or tapering into nothingness at the other. (Since carved meat cools quickly, be sure the gravy is kept piping hot, ready to pour over the turkey.) When you have finished one side of the turkey, turn it around and repeat the process on the other side.

PartyCharlie's Halloween Costume Party Tips:


Halloween is just around the corner, but that doesn't mean you should let the kids have all the fun! Follow my tricks to treat your friends and family to a ghoulishly fabulous costume party with a grown-up twist!

Hollow out pumpkins of various shapes, sizes, and colors. Drill small holes in them to create your designs. Add votive candles and arrange near the front door.

Play scary Halloween sound effects, and horror movie music as the guests arrive.

Have a door prize for the best Halloween costume.

String fishing wire over the buffet table and hang orange paper lanterns. Scatter Halloween confetti over the tablecloth.

Plan a simple party buffet menu. A variety of soups, salads and sandwiches will make it easy on you and your guests.

Make a graveyard cake for dessert. Cut cookie dough into tombstone shapes and bake. Use icing to write R.I.P. on the cooled cookies and personalize them with guests' names. Stick the tombstones into a chocolate cake to resemble a graveyard.

Create a refreshment station. Fill an aluminum tub with ice, and pack it with all your favorite canned and bottled drinks, and let everyone just grab an go.

Pumpkin Carving Tips:

Halloween is fast approaching. Skeletons, scarecrows, and witches, are always fun decorations, but nothing says “Halloween,” like a hand-carved pumpkin. The Jack-O-Lantern dates back centuries to the very beginning of that magical night called “Halloween.” Follow theses carving tips for a ghoulishly fun time!

1. Medium-sized pumpkins work best for stencils. If you are going to carve free-hand, then let your imagination choose the size.

2. Use a stencil for very detailed carving. Your local craft shop will have all the tools you need. The internet has many sites offering free stencils that you can download.

3. A boning and paring knife, an ice cream scoop, some old newspaper, a black crayon, and your imagination, are all you really need to carve the pumpkin free-hand.

4. Place the newspaper under the pumpkin. Cut around the stem of the pumpkin, and remove. Scoop out the seeds and membrane. Using a crayon, mark up the face of the pumpkin. Cut out the pieces, using a paring knife.

5. Place a votive candle into a glass candle holder. Light the candle and place inside the pumpkin. Place the stem-top back onto the pumpkin.

6. Put the pumpkin on display, to scare all the ghouls and goblins away!

So far, 2009 has been a banner year for PartyCharlie! I’ve appeared on numerous Radio, and TV shows. I was honored by the City of Beverly Hills. My book “Party Planning Secrets,” has been selling at a record pace, and a few weeks ago I was featured in the prestige’s Los Angeles Business Journal!

"Charles Scola believes partying is the key to a healthy lifestyle.

Known as "Party Charlie" in Hollywood, the 50-year-old professional event planner has produced thousands of weddings, movie premieres and corporate events, including the grand opening of CityWalk at Universal Studios and a holiday bash for Hugh Hefner at the Playboy Mansion.

"I could never retire because I'm in a business that constantly gives me praises," he said. "That boosts my immune system so I'm never sick."

Scola said studies show that social people are healthier than recluses. But he notes that when he talks about partying, "it's the social interaction definition, not the college boy's definition."

He believes that when people eat at parties, socializing consumes calories and they tend not to gain weight. If they ate the same food at home, they would sit in front of the TV and it would turn to fat.

The formula certainly seems to work for the trim and energetic Scola.

"When I'm planning an event, nothing makes me nervous--it gives me a boost of energy," he said. "I find it exciting to feed thousands of people and do it well."

Charlie's Tips For Hiring A Valet Service:

· Get references. Follow up – call the references.

· Put it in writing. Put everything (hours, tips, special arrangements and general expectations) in writing.

· Parking attendants should provide, Flashlights, reflective cones, signs to let people know about valet service, key cabinet, uniforms, and valet tickets.

· Avoid confusion. When you’re having a valet service, post signs reading “Valet parking service for “such-and-such party.”

· Ask your valet company to Check with City Hall. Find out if you need any additional licenses or permits.

· Inform your neighbors. They will appreciate you notifying them before allowing guests to park in front of their homes.

· Prepare for the weather. Make sure the valet service has umbrellas for rain, as well as snow removal equipment (such as ice scrapers, salt, sand, and snow shovels) during the winter months. ( Well I guess we wont be needing that in LA!)

· Have the service visit the property. Make sure the company verifies the parking lots, locations and local rules. Also discuss security concerns.

· Find out what they’re wearing. Ask the valet service representative to come with examples of the uniforms and discuss what special dress requirements you have.

· Make sure the company takes care of their staff – so that you don’t have to. Make sure when you speak with the valet company that they provide meals for their staff (or that the hours of your party don’t encompass a meal time). Also, make sure that the company has a written policy that valets are not allowed to drink any alcohol from the bar while at the party.

Senator Kennedy & PartyCharlie:

First of all… YES, that’s me, sporting a beard with Senator Ted Kennedy. I first met the Senator in 1983 at Senator Tunney’s home, for an event for Governor Jerry Brown. Linda Ronstadt was one of the many celebrities in attendance, and the rumor making the rounds, was that Governor Jerry Brown was dating the internationally acclaimed singer.

A few years later, in 1994, I once again had the pleasure to meet Senator Ted Kennedy at a fundraiser I catered for Gray Davis, who was campaigning for Governor of California. It was a full service brunch with all the pomp and fanfare one would expect for an event of that magnitude. The outstanding event included the very finest smoked salmon, a breathtaking bakery display, assorted fresh squeezed juices, a cappuccino bar, top-flight chefs cooking gourmet omelets to order, all accompanied by a full white linen style service.

I noticed that the Senator was not eating. I approached him in my PartyCharlie way, and asked if I could prepare something else for him. The Senator explained that he and his wife, Vicki, already had breakfast, and would wait for lunch. I was delighted to tell him that I had a wonderful, homemade lasagna, for our staff meal, accompanied by our trademark Caesar Salad with Garlic Cheese Croutons. The Senator smiled, and asked if there would be enough for him and his wife. I returned the smile with a resounding, YES! Plus seconds!

The senator later asked what my last name was. I said SCOLA. He replied, “HA! Italian! No wonder why the Lasagna was so great!” I told him about the time I met him at Governor Brown’s event, and wondered if I could have a picture with him. He said he’d be delighted. It’s a picture that I’ve cherished for a long time, and I’m very happy to be able to share it with you.

A few years later, a good client of mine called, and asked me to create an event for Senator Barbara Boxer and Senator Diane Feinstein. My client said, “By the way, Senator Ted Kennedy is coming, and has requested your magnificent lasagna.” Well, you can imagine how that made me feel. On the day of that event, I brought the picture with me, and asked the Senator to sign it. I never asked for an endorsement on the lasagna, but I was happy to get it!

Senator Kennedy has been in the public eye for a long time, and I’m sure he will be greatly missed. I would like to take this time to give my most sincere condolences to his family, and friends.

Pool Party Tips:

"Summer time, and the living is easy..." It's time to cool down, and have some fun! Grab your inflatable raft, and beach ball... It's time to have a Pool Party!!! Just follow the pool party tips below, for fun, fun, fun in the sun. Or if you really want to kick it up a notch, give me a call for a wet and wild party extravaganza that will put you into the "Party Hall Of Fame!" We can do it all, from a simple barbecue, to a scorching Hawaiian Luau, complete with surf & sand...

Pool Party Tips:

1. Keep the menu simple. Finger foods work best. Pizza, chicken wings, hamburgers, hot dogs, submarine sandwiches, chips, fresh fruits, and sliced veggies with dip.

2. Provide a room for people to change into or out of bathing suits.

3. Ice, Ice, and more Ice. You can never have enough.

4. Keep the drinks in a cooler or a big tub. Use plastic cups for safety around the pool. A healthier alternative to sodas is to provide fresh fruit drinks, such as lemonade or punch.

5. Set up a number of patio chairs and tables around the pool area for your guests. Set up two additional large tables, one for snacks, the other for beverages. Arrange an ample supply of plates, cups, napkins, and utensils on the serving tables.

6. Play a variety of different musical styles.

7. Pool party games like "Marco Polo, and Sharks and Minnows" are always crowd pleasers.

8. Make sure somebody is keeping an eye on the children. A designated kid watcher is a must!

Sausage Cooking Tips:

July is only a few weeks away, and that could only mean one thing... National Hot Dog Month!!! I bet you thought I was going to say the 4th of July. Well, when you think about it, what would a fourth of July barbecue be without the venerable frankfurter? Invented over 500 years ago in Frankfurt, Germany, the hot dog took America by storm in the late 1800s, and it is still one of our favorite foods today.

: a cured cooked sausage (as of beef or beef and pork) that may be skinless or stuffed in a casing

That's how Merriam-Webster describes them... My description is... simply delicious!

Sausage Cooking Tips:

Cook fresh sausages over gentle heat so the interior fully cooks.

Sausages can be steamed, simmered, fired or grilled, or a combination of methods.

Before cooking, prick the skins to prevent bursting.

Reheat sausages in hot water, but avoid boiling them as their skins will split.

Onions in the cooking liquid add flavor to sausages.

Parboil fresh sausages in water or beer before grilling or frying.

Beer adds a stronger flavor than water. Malt-heavy beers add sweetness and are good for strongly flavored sausage. Lagers add a slight bitterness and complement sweeter style sausages.


New York Onions For Your Dog

5 medium brown onions
1 tablespoon butter
1/4 cup ketchup
hot sauce to taste
hot pepper flakes to taste

Cut onions into thin rounds. Melt butter over very low heat in a pot big enough to hold the onions. Add onions, and cover. Cook slowly for 45 minutes to an hour, stirring occasionally until the onions are very soft. Add the rest of the ingredients and cook for fifteen minutes. Serve over your favorite hot dog, or sausage. Serves 10 to 12.

Stress-Free Party Tips:

The more you can get ready beforehand, the more time you will have to enjoy yourself during the party.

Shop for all non-perishable food ingredients and other supplies as soon as you can. The day before the party shop for all your fresh ingredients and last minute items.

Make sure you have enough ice.

Set up the linens, tablecloths, the serving utensils, napkins, and arrange centerpieces, flowers, and candles. Set up the bar with glasses, ice bucket, corkscrews, and cocktail napkins the morning of the party.

Make sure there is soap, towels, and toilet paper in the bathrooms and add a votive candle or two.

Start assembling and preparing the food. If things will be served warm or require any cooking, have them ready to go in their baking dishes, so you can get all the prep dishes washed.

Empty all garbage cans. Place clean-up rags where they are easily accessible. Once the house is in order and ready, you can get yourself ready.

Set out any serving dishes for food to come and put out any hot pads that will be required.

Put out any food that you can.

Once most guests have arrived, put out the rest of the food and let guests help themselves.

Stress-Free Party Dips:

BLACK BEAN DIP


2 15-ounce cans black beans
2 teaspoons chopped garlic
2 tablespoons chopped fresh cilantro (or 1 T dried)
2 small tomatoes, chopped
2 teaspoons crushed red pepper (or to taste)
1 teaspoon cumin
Juice of 1 lime
1 small onion, finely chopped
Salt and pepper

In a food processor , coarsely chop the black beans, garlic, cilantro and 1 tomato. Transfer to a serving bowl. Add the red pepper, cumin, lime juice, onion, 1 chopped tomato, and salt and pepper. Chill, allowing the flavors to blend. Serve with chips and jicama scoops. Makes about 3 cups.

BLUE CHEESE DIP

1 cup blue cheese, crumbled, plus a little for garnish
4 ounces cream cheese, softened
1¼ cups sour cream
1 tablespoon lemon juice
Zest of 1 lemon
2 cloves garlic, minced
Salt and pepper to taste

In a medium bowl, cream together the blue and cream cheeses. Add the sour cream and mix until well-incorporated. Stir in the remaining ingredients. (This recipe can also be prepared in a food processor .) Transfer to a serving dish. Sprinkle a little crumbled blue cheese on top. Refrigerate for several hours to let the flavors meld, then set it out about 30 minutes before serving. Serve slightly chilled. Makes 3 cups.

PartyCharlie's Barbecue On A Budget:


When planning a party on a budget, it's very important to know approximately how many people will attend.


Good lighting will always make your party feel special. Miniature white lights strung from the trees are an inexpensive way to get that
accomplished.

Don't worry about spending a lot of money on decorating. Sometimes the great outdoors are decoration enough. Keep it simple with a picnic table and plenty of chairs.


Keep the bugs under control by using citronella candles.


A general menu like this, will get you off and running:

Hot dogs, hamburgers, veggie burgers, BBQ chicken, smoked sausages, salads, baked beans, chips & dips, a veggie tray, sliced tomatoes and onions, a bowl of lettuce leaves, relish, ketchup, various mustards, soda, beer and coffee. Top that off with a couple of cakes and pies, and everyone will go home happy!

Cuma is a range of organic wines produced by Michel Torino Estate. The 2008 Torrontes shows a bright green/yellow color, with aromas of rose petals and hints of jasmine and orange skin. MAKING THE MOST OUT OF YOUR REFRIGERATOR SPACE:


This is where an ice chest or two will come in handy.

Buy or borrow an ice chest or two depending on the size of the party.

Take an inventory of what's inside you're refrigerator. Combine duplicate items as long as the dates don't differ.

Remove items that are past their prime. You can even make a game out of getting rid of food past the expiration date by having your kids do it. Whoever comes up with the greatest amount of old food wins a prize.

There's no need to store beverages in your refrigerator for your party. Most only require an hour and a half in an ice chest topped of with Ice to completely chill.

Use Ziploc style bags to store your food. They will easily conform to the area of the refrigerator and help you create more room than plastic containers will. Sometimes you might fill a plastic container only halfway. The other half is wasted space. And when you're throwing a party, space in your refrigerator is at a premium.

If your freezer has built up a two-inch layer of ice all around it, it's time to defrost. Get this done several days in advance of your party.
